Potato Salad


Eggs, pickles, and celery makes Mom's Potato Salad an easy and delicious side dish.  It is the perfect salad to bring to any picnics or barbecues you are headed to this summer



Potato Salad


Ingredients

  • 10 cups cubed red potatoes
  • 3 celery stalks, diced
  • 1 cup diced dill pickles
  • 1/2 cup diced red onion
  • 3 hard-boiled eggs, peeled and diced
  • 1 cup mayonnaise
  • 1/4 cup mustard
  • salt and pepper

Instructions

  1. Cover the potatoes with water. Bring to a boil. Reduce heat and continue to simmer until potatoes are tender. A fork or knife should be able to go through the potato without any resistance.
  2. Drain and rinse the potatoes. Cover with cold water until the potatoes are cool. Drain again.
  3. Stir together the potatoes, celery, pickles, onion, eggs, mayonnaise, and mustard until combined.
  4. Season to taste with the salt and pepper. Refrigerate until ready to serve.
